About the role

Assist the Head of Production in managing the donut and bakery production process, overseeing the team, ensuring product quality and consistency, controlling raw materials, and ensuring production runs according to targets and SOP.

Key responsibilities

• Assist Head Produksi in arranging donut and bakery production processes

• Oversee team and ensure quality and consistency of products

• Control raw materials and manage inventory

• Ensure production runs according to target and SOP

• Perform mixing, fermentation/proofing, shaping, frying, baking, and finishing

• Conduct quality control and maintain recipe consistency

• Monitor production targets and production planning

• Manage raw materials using FIFO/FEFO and minimize waste

• Coordinate with team and provide leadership

• Troubleshoot production process issues

About you

• Knowledge of basic donut and bakery production techniques

• Experience with mixing, fermentation/proofing, shaping, frying, baking, and finishing

• Quality control and recipe consistency management

• Production planning and production target monitoring

• Raw material management, FIFO/FEFO, and waste minimization

• Team coordination and leadership capabilities

• Understanding of food safety, hygiene, and sanitation

• Problem solving and production process troubleshooting skills

• Ability to work quickly, carefully, and under pressure
