About the role

Dharma Uluwatu is seeking a talented Chef Hot & Cold to join our culinary team in Kuta Selatan, Bali. This is a full-time position that offers an exciting opportunity to work in a dynamic hospitality environment, preparing and presenting both hot and cold dishes to the highest standards. As Chef Hot & Cold, you will play a crucial role in maintaining the quality, consistency and presentation of our food offerings, contributing directly to our guests' dining experiences and the overall success of our establishment.

What you'll be doing

• Prepare and cook a variety of hot dishes including grilled items, sautéed dishes, and other cooked specialities according to established recipes and culinary standards

• Prepare cold dishes, salads, cold appetisers and other chilled items with attention to detail and presentation

• Maintain strict food safety, hygiene and sanitation standards in all food preparation areas

• Ensure consistent quality and portion control across all dishes prepared

• Work efficiently during service periods, managing multiple orders whilst maintaining high presentation standards

• Collaborate with other kitchen staff and chefs to ensure smooth kitchen operations and timely food delivery

• Monitor stock levels and communicate ingredient requirements to management

• Follow all food preparation procedures and plating guidelines to ensure visual appeal and consistency

• Respond to special dietary requirements and modifications from guests as needed

• Contribute to menu development and suggest creative dishes that align with our culinary vision

What we're looking for

• Proven experience as a Chef Hot & Cold or similar culinary role in a hospitality setting, with a minimum of 2-3 years' experience

• Strong proficiency in preparing both hot and cold cuisine to professional standards

• Comprehensive knowledge of food safety, hygiene protocols and sanitation practices

• Excellent knife skills and food preparation techniques

• Ability to work under pressure during peak service times whilst maintaining quality and composure

• Strong attention to detail with a focus on presentation and plating aesthetics

• Excellent communication and teamwork skills to coordinate effectively with kitchen and front-of-house staff

• Physical fitness and stamina for standing for extended periods and performing physically demanding tasks

• Flexibility with working hours, including weekends and public holidays

• Culinary training or certification from a recognised institution is preferred

• Experience working in fine dining or high-end hospitality establishments is advantageous
