Head Chef – Eco Retreat

About the role

Lead the kitchen for a 3-times-a-day buffet (breakfast, lunch, dinner) with a strong vegetarian focus and good seafood options. Ocean Mantra Village is a family-run eco retreat on a private bay in Bima (NTB) with 24 units (glamping and bungalows), yoga shala and restaurant up to 50 guests. The restaurant serves a mainly plant-based menu with wide vegetarian options and simple grilled fresh daily seafood. We do not serve meat or chicken.

Key responsibilities

• Lead the kitchen for a 3-times-a-day buffet (breakfast, lunch, dinner) with a strong vegetarian focus and good seafood options

• Train, schedule and supervise a small kitchen team in a hands-on way

• Ensure high standards of food quality, taste, presentation, hygiene and kitchen cleanliness

• Plan production for group retreats and special dietary needs

• Manage stock, ordering and relationships with suppliers, working with limited local products in Bima and Lombok/NTB

• Control food cost and minimise waste while keeping portions generous and guests happy

• Work closely with the Retreat / Operations Manager and owners on guest feedback and continuous improvement

About you

• 5+ years experience as a Chef / Sous Chef / Head Chef in resorts, hotels, villas or quality restaurants

• Strong experience with buffet service and cooking for groups

• Comfortable cooking vegetarian / plant-forward food and also fish/seafood

• Good understanding of basic nutrition and special diets (vegan, gluten-free, dairy-free) – or strong willingness to learn

• Able to work with limited local ingredients and still keep food tasty, varied and consistent

• Experience in managing and training a small kitchen team

• Strong focus on hygiene, food safety and clean kitchen standards

• Good English for communication with owners and some guests
